National Pineapple Upside-Down Cake Day

Hello everyone!  Bethany here...Did you know that today is National Pineapple Upside-Down Cake Day?  I had NO clue such a thing existed!  In my house we always like to celebrate the silly holidays as well as the big ones, I guess maybe we just like a reason to celebrate, lol!  So when searching for holidays coming up, this is what I had found.  It made me giggle.  It's been a while since I have made or even eaten a Pineapple Upside-Down Cake, but from what I remember, it is yummy!  I think we are going to be making one today....I mean the fruit makes it healthy right?!  I don't know if my kids have ever had it, so what better way to introduce it to them than to try it today!!

Yum on the cake..I haven't had that probably for 40 plus years! Thanks so much for todays goodies!! (I just got a few fonts that were grade school teacher related and this will go perfect with this paper!)

Pineapple cake is yummy. Haven't had it in years though. Dole has a good pineapple cake which is made with angel food cake, crushed pineapple and whipped cream. I can't remember the rest of it though but my family loved it and it was no bake. Thanks for todays download.

Ny dad just recently made PUC, but his was muffins/cupcakes... it was defintely cake but it was shaped like a muffin... they were absolutely amazing... if you're interested here's the recipe...

Upside Down Pineapple Muffins

Makes: 2 Dozen
Preparation Time: 25 min
Cooking Time: 20 min

What You'll Need:
2 (20-ounce) cans sliced pineapple, drained
1 (8-1/2 ounce) can sliced pineapple, drained
24 maraschino cherries
1/2 cup packed light brown sugar
1 (18.25-ounce) package white cake mix
1/4 cup canola oil
3 egg whites
1 (20-ounce) can crushed pineapple, drained, with juice reserved

What To Do:
Preheat oven to 350 degrees F. Coat 24 muffin cups with cooking spray.

Place a pineapple ring in bottom of each cup. Place a cherry in center of each pineapple ring and sprinkle each with an equal amount of brown sugar; set aside.

In a large bowl, with an electric beater on medium speed, beat cake mix, oil, egg whites, and reserved pineapple juice until well combined.

Stir in crushed pineapple and divide mixture evenly among muffin cups.

Bake 20 to 25 minutes, or until golden. Allow to cool 15 minutes then invert muffins onto a cookie sheet. Allow to cool, and serve, or cover until ready to serve.
Notes
Make sure to invert the muffins while still warm so they'll easily pop out of the muffin cups.
